Banana bread chia pudding

Chia seeds…you either love em or hate em. Me? I love them! Maybe it’s the texture and the fact that they kind of remind me of bubble tea. You may have different idea on them…some people think they look like frog eggs when they expand – be that as it may, they’re a GREAT source of super food AND excellent when cooking.

I love chia pudding, but only when they’re hand made, so I made a healthy banana bread chia pudding for dessert the other night and it’s definitely one of my faves…

Ingredients

  • I large banana mashed
  • 1 cup chia seeds
  • 1 and a half cups coconut milk
  • 1 tsp cinnamon
  • 1 tsp vanilla

Method

  • Mix all of the ingredients together.
  • Pour into glasses.
  • Refrigerate for 2 hours .
  • Eat and relish in how easy this was!
